What was the generation method for the map? Did you use appendix B? Good luck with the campaign by the way!

I generated the map using Hex Kit's built in generator (a basic altitude-based terrain generator, meaning it doesn't consider temperature or other factors). I had to add the arctic, desert, and sea regions to the map after it was generated. 5e doesn't contain an Appendix B equivalent (that I'm aware of), so generating it quickly and not fretting over it was good enough.

Regarding the table, yes I did, though it was modeled after the 1e Race/Class table, and further inherits Class/Alignment restrictions from 1e as well. Certain issues with 5e class cohesiveness (sorcerers and wizards both get arcane magic in vastly different ways?) are resolved with this table as well: dragonborn get sorcery, which is very dragon-like of them, while other races get access to other specific arcane magic options... humans learn it through wizardry, drow may be a fey warlock or arcane trickster, dwarves may be eldritch fighters, and so on. The exclusiveness of these classes instantly gives them unique purpose and lore when they are encountered in the world, instead of every race being able to dress up as every class and existing everywhere.

In short: the table instantly creates/implies lore of the world.
